Whole Berry Raspberry Curd
Whole Berry Raspberry Curd, sweet and tart this condiment is made with fresh raspberries and is the perfect ingredient for pastry fillings or just smeared on your morning toast!

- 3/4 Cup raspberries
- 3/4 Cup granulated sugar
- 3 egg yolks lightly beaten
- 1/2 stick butter 4 Tablespoons
- 1/8 teaspoon vanilla bean paste or extract
- dash of salt
Place freshly washed berries into a small sauce pot. Add the remaining ingredients except for the vanilla bean paste and whisk to combine, breaking up the berries. Place temperature on medium heat and let come to a slow boil. Whisking constantly.
Continue to boil gently for 3-4 minutes, stirring constantly.
Take off the heat and add in the vanilla. Let cool and use immediately or store in an air tight container in the fridge. Enjoy!
