Ingredients
1Tablespoonolive oil
1-2potatoessmall to medium sized diced
24ouncespeasfresh or frozen
2-3clovesof garlic
Salt and pepper to taste
4cupsvegetable broth
Instructions
In a large skillet, heat olive oil on medium heat.
Add diced potatoes, peas, garlic, salt and pepper, and cook until soft and potatoes get slightly brown. About 10-15 minutes. Take off the burner and let sit for 5-10 minutes while it cools down.
Take mixture and place in a blender with vegetable broth. Blend for 3-4 minutes into a smooth puree.
Place puree into a large saucepan or pot and cook for another 10 minutes on medium heat, stirring often. Place into serving bowls and enjoy!
Notes
You can use fresh or frozen peas for this.
Use your favorite potato in this recipe.
