Prepare a boiling water canner. Heat the jars in simmering water until ready to use, do not boil. Wash the lids in warm soapy water and set aside with the bands.
Place the diced peaches in a wide heavy-bottomed saucepan. Use a potato masher to gently break peaches down.
Combine all ingredients, except the toasted almonds, in a saucepan and bring to a boil over medium heat. Stir the jam frequently until it thickens and reaches a gelling point (220°), about 12-15 minutes. Stir in toasted almonds, take off the heat.
Ladle the hot jam into a hot jar leaving a ½ inch headspace. Remove any air bubbles. Wipe the jar rim. Center lid on the jar and apply band, adjust to fingertip tight. Place jar in the boiling water canner. Repeat until all jars are filled.
Process the jars 10 minutes, covered, adjusting for altitude. Turn off the heat, remove the lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours at room temperature. Check lids for a seal, they should not flex when the center is pressed.
