1tablespoonolive oil
5cupschicken stock
1poundrotini pasta
1packageal fresco chicken sausagesroasted pepper and asiago flavor
2cupsbroccoli florets
12ouncesjarred sliced roasted red peppersdrained
4ouncesasiago cheeseshaved, plus more for garnish, optional
In a large stockpot or large heavy bottom skillet with deep sides, saute the garlic with the olive oil over medium-low heat until fragrant, 1 minute. Add the chicken stock and pasta, stir to combine. Bring to a boil, cover, reduce heat to medium-low and simmer for 8 minutes.
Thinly slice the sausage, add it to the pot with the broccoli, red peppers, asiago cheese, cream cheese, and pepper. Stir to combine and simmer uncovered for 15 minutes, or until sauce is thickened. Serve with a garnish of more asiago cheese and fresh parsley., optional.
