Take the oreo and carefully half them. On the side with less cream, place four mini marshmallows. Under the broiler in the oven, toast the marshmallows watching the whole time this will take about 20 seconds.
Let marshmallows cool and place a teaspoon full of vanilla ice cream on top of marshmallows. Top with other half of oreo and very gently press down. Place in the freezer for 30 minutes to set up.
Melt chocolate chips in microwave a cup at a time in 20 second intervals, stirring in between until melted. Fully coat oreos in the melted chocolate and place them on a sheet tray lined with parchment paper or a silicone baking mat. Sprinkle with graham cracker crumbs and place back in the fridge to set up, about 30 minutes.
