mayonnaise

green part only, thinly sliced, plus more for garnish

cooked cold lobster
claw and knuckle meat

split-top hot dog buns

tablespoon
unsalted butter
melted, plus more for serving, optional

Instructions
In a large bowl, stir together the mayonnaise, lemon juice, garlic powder, onion powder, salt, pepper, and scallion until combined.
Add the lobster and fold it in so it’s covered in the sauce. Place in the fridge until ready to serve.
Place the hot dog buns on a sheet tray. Brush the sides and tops with the melted butter.
Place a large skillet over medium heat. Add the buns to the skillet and toast on the sides and top to your desired toastiness.
Fill the buns with the lobster mixture. Garnish with more scallions, optional. Serve with lemon wedges and more melted butter on the side, optional.
