  • 5 bell peppers (any color you wish) cut into 1/2 inch strips, stem and seeds removed
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder


  • Preheat oven to 350°F degrees. Place sliced peppers into a large bowl with the remaining ingredients. Toss to coat.
  • Place peppers on a baking sheet (I line mine with foil, this is optional) in a single layer. Bake for 60 minutes, turning every 20 minutes. Peppers are ready when they are tender and slightly charred.
