Let steaks sit out on counter and bring to room temperature, about 30 minutes. This will ensure even cooking. Generously season with salt and set aside.
Heat oven to 500 degrees, place cast iron skillet in oven for 10 minutes until screaming hot. While waiting for the skillet to get hot, get your charcoal grill ready and prepped.
When the skillet is hot and the grill is ready you are ready to cook the steaks. This is a very fast process to make sure you have all your ingredients with you.
Take out cast iron skillet CAREFULLY with thick pot holders to protect hands. Place on a burner on the stove over high heat and add the oil. Immediately add the steaks. Let sear about 1 minute on first side, turn over with tongs and add the butter and garlic. With a spoon, start ladling the butter over the steaks about another 2 Minutes. Transfer everything outside to the grill and place steaks over coals, season with pepper. Now you will finish them to your desired temperature, keep basting them with the butter mixture but be cautious of flare ups. Serve and enjoy!
