Wash tomatoes and let dry. With a pairing knife, carefully cut the top off at the stem end. On the bottom end, cut a very small piece off so the tomato can stand up and won't tip over. Using a pairing knife, carefully core the inside of the tomato, getting as much of the seeds out that you can but don't pierce all the way through the bottom. Core all tomatoes and set aside.
While coring tomatoes, take out goat cheese, place in bowl and let come to room temperature. Add remaining ingredients. With a hand mixer, whip on low for about a minute until cheese is smooth and mixed with ingredients. Place in piping bag with large whole tip or in a zip lock bag and cut a corner for easy stuffing.
Stuff cored tomatoes with goat cheese mixture. Serve and enjoy!
