Servings 4 servings
- 1 1/2 Cup cilantro loosely packed
- 2 Tbls red wine vinegar
- 2 each garlic cloves
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1 tsp onion powder
- 1 each lime juiced
- 1 Tbls brown sugar
- 1/4 Cup extra virgin olive oil
- 1/4 Cup parsley loosely packed
- 2 Tbls butter per steak
- 2 pounds rib eye steak
Place all of the ingredients except the steak, garlic, butter and olive oil into a food processor or powerful blender. Rough chop the garlic and toss that in. Start pulsing the mixture and drizzle in the olive oil until it is pureed.
Place steaks in a ziplock bag. Pour marinade over the steaks making sure it covers all sides and let sit in the fridge over night. Turn the bag over about half way through the marinating process.
Preheat grill on high, turn to medium low heat and oil the grates. Cook steaks until desired doneness, let rest for about 5 minutes. While resting place 2 Tbls butter on each steak, letting it melt into the meat. Serve and enjoy!
