Recipe makes 1/3 Cup candied almonds. Per parfait you will only use 2 Tbls of the almonds. Use the rest for more parfaits or as an ice cream or cereal topper! The rest of the ingredients are per parfait.
First you want to make the candied almonds. Preheat oven to 350 degrees. Place sugar and water in a saute pan and allow sugar to melt over medium low heat. Add in almonds and cook until water is evaporated, stirring almond constantly, this takes about 5 minutes.
Place almonds on sheet tray lined with parchment paper or silicone mat. Bake about 5 minutes, just until crisp. DO NOT OVER COOK, keep an eye on these they will burn quickly from the sugar. Take out of oven and allow to cool on the pan. Store in a air tight container until ready for use.
To assemble the parfait, spoon half of the yogurt in the bottom of glass. Place half the berries and 1 tbls of the candied almonds. Spoon all but a dollop of the yogurt on top. Place the remaining berries and 1 tbls.almonds. Add a dollop of yogurt on the very top and garnish with berries and almonds if desired.
