Loaded Shredded Hash browns Potato Pancakes

Ingredients

  • For the potato pancakes:
  • 1/2 bag Ore Ida Shredded Hash Browns
  • 2 eggs
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp chili powder
  • 1/4 tsp ground cumin
  • Salt and pepper to taste
  • For the toppings:
  • 8 cups chili
  • 2 Cups cheddar cheese blend
  • 1 Cup sour cream
  • 2 scallions green part only, sliced

Instructions

  • Let the hash browns defrost. Season with dried spices. Beat eggs in a separate bowl and mix together with the potatoes.
  • In a skillet over medium heat spray with cooking spray and form patties. Let cook covered until golden brown on bottom side, about 5 minutes. Flip and repeat covered.
  • Serve with 1/2 cup of the chili per pancake, cheese, sour cream and scallions. Enjoy!
