Greek Panzanella Salad with Grilled Chicken


  • 1 each Chicken Breast boneless skinless
  • 1 each Romaine Lettuce head, shredded
  • 1/2 Pint Grape Tomatoes sliced in half
  • 1/2 each English Cucumber cut in medium chunks
  • 1/2 Cup Feta Cheese crumbled
  • Greek Salad Dressing
  • Homemade Garlic Croutons 1/2 a recipe
  • Pickled Red Onions for garnish


  • Take the chicken breast and place in a plastic bag.
  • Add about 1-2 Tbls of the dressing to the bag, close the bag and massage marinade into chicken so it is covered in dressing. Let this sit in the fridge for 1-2 hours.
  • Grill the chicken breast until fully cooked. Let this cool completely on the counter and place this in the fridge again to get cold.
  • Now, dice, slice all your ingredients for the salad to your liking.
  • Place all ingredients in a large bowl and add enough salad dressing to light dress the ingredients. Using a spoon, mix all the ingredients.
  • Place on a plate and enjoy!
