Cut the bread into bite sized cubes. I actually just tore the bread with my hands, I like the rustic look to it. I know that French bread sizes vary so just make enough of the bread pieces so they fill a gallon sized bag.
In a large skillet heat the oil over medium low heat. Place the garlic that has been peeled and sliced into the hot oil. Let the garlic get a golden brown color and take it out of the oil. Discard the garlic.
The oil is now flavored with the garlic. If you want to customize this to your taste now would be a good time to throw in any additional flavors you like. A rosemary sprig or two would go nicely, just toasting it like the garlic and then discarding it.
Place the bread pieces in to the hot oil and toss until all of the bread is coated in the oil.
Season with the salt and pepper.
Toss this every minute or so. This will help the croutons get brown on all sides.
When everything is nice a toasty to your liking transfer them on to a cookie sheet to completely cool.
Use immediately or store in an air tight container/zip lock bag.
These are only good for a couple hours or they will start getting soft. Use on your favorite salad or just as a snack!
