Chocolate Covered Strawberry Bars

  • 1/2 c. butter
  • 1 – 12 oz. package milk chocolate chips divided
  • 2 eggs
  • 1/2 c. sugar
  • 1 tsp. almond extract
  • 1 c. flour
  • 1/2 tsp. salt
  • 3/4 c. strawberry jam
  • 1 c. white chocolate chips

  • In a saucepan, melt the butter. Remove from heat and add 1 cup of milk chocolate chips. Do not stir.
  • In a small mixing bowl, beat eggs until foamy. Gradually add the sugar. Stir in the butter, chip mixture, and almond extract.
  • In another small bowl, mix together the flour and salt. Add to egg mixture until just combined.
  • Spread half of the batter into a greased 9-inch square baking pan. Bake at 325 degrees for 15-20 minutes or until golden brown at the edges.
  • Gently spread the strawberry jam over the warm crust. Sprinkle the white chocolate chips evenly over the jam.
  • Stir the remaining milk chocolate chips into the remaining batter and drop by teaspoonfuls over the jam. Bake for 30-35 minutes longer or until a toothpick inserted near the center comes out clean. Cool completely. Cut into bars. Enjoy!
