HI!! I’m so glad you’re back for another lil ole recipe of mine! Today I have a super easy, yummy, refreshing cucumber onion salad. It’s a little sweet, a little sour, just perfect!
This recipe is very similar to my pickled red onions. Although, this is sweeter!
Ingredients
1 each english cucumber
1/2 each white onion
1/2 Cup water
1 Cup red wine vinegar
3/4 Cup sugar
1 each garlic clove

Directions
Place the water, vinegar and sugar in a sauce pan over medium heat. Cook this until the sugar is completely dissolved. Place this on the side. Slice the cucumber in thin rounds. Slice the onion in julienne, or thin strips. Place this in the vinegar mixture along with a smashed clove of garlic. Let sit over night before serving. That’s it! SUPER easy and is a great salad or side dish!
The red wine vinegar gives it this pretty pink color, I love it!
Sweet & Sour Cucumber Onion Salad

Looks delicious! The sweet and tangy flavor would go nicely with so many foods. I prefer to use honey and maple syrup as sweeteners. Do you think that would still work?
