Soft & Chewy Spring-Time Blondies

Hi everyone! I have today for you all a dessert that I did NOT fail at! YAY! Thank you, thank you….no need for applause. These came out amazing and just what I had hoped for! I just had to jump on the bandwagon of all these yummy looking cookies and everything else that were stuffed with Easter candy goodness! Easter time is my all out favorite time of year- candy wise! My favorite are the Cadbury chocolate mini eggs. YES! So that’s what I put into these ultimate soft and chewy blodies.

I got the recipe for the blondies from TasteOfHome.com just switching out the chocolate chips for the mini eggs.

Ingredients

1 1/2 Cups                Light Brown Sugar, packed

1/2 Cup                    Butter, melted

2 each                      Eggs

1 tsp                         Vanilla Extract

1 1/2 Cups               All-Purpose Flour

1/2 tsp                     Baking Powder

1/2 tsp                     Salt

6 oz                         Cadbury mini eggs

 

Directions

Preheat oven to 350 degrees. Melt butter in microwave in microwave safe dish (30ish seconds) and let cool. Add the eggs and vanilla to a large bowl and beat eggs with hand mixer. Add the brown sugar to the mix. Combine well. Add butter and mix. In separate bowl, mix the remaining ingredients except for the chocolate eggs. Mix dry ingredients together and add a little at a time to the wet mixture. Once wet and dry mixtures are combined thoroughly, fold in the chocolate eggs with a spoon or spatula. Pour mixture into a greased 13×9 pan.

Place in oven and bake for 20-25 minutes or until a toothpick inserted into center comes out clean. Let cool on a wire rack.

Once cool, cut into bars and enjoy! Hubby couldn’t wait for me to finish taking pics, haha:
