Wow, I can’t believe it’s week 3 already in our slow cooker series! This is a two for one post today! First I show you how to cook the most juicy slow cooker roasted chicken, slathered in homemade pesto. Then, a really great lunch option or a light dinner, slow cooker pesto chicken salad, YUM! It really doesn’t get any easier then this!
Ingredients
Slow Cooker Roasted Pesto Chicken
1 each chicken, whole
2 Tbls homemade pesto
Slow Cooker Pesto Chicken Salad
2 Cups chicken, from the roasted pesto chicken
3 Tbls mayonnaise
1 tsp homemade pesto

Directions
Slow Cooker Roasted Pesto Chicken
Rub the pesto all over the chicken, even under the skin. You can see how I season under the skin in this post. Place in the slow cooker on low for 5-6 hours or high 4-5 hours. Serve immediately, use the leftovers for the pesto chicken salad.
Slow Cooker Pesto Chicken Salad
Cube or shred the chicken in large chunks. Mix with the remaining ingredients. Let sit in the fridge over night or at least 5 hours so the flavors can meld. If you find the chicken salad gets a little dry the next day you can add another Tbls of mayonnaise.
Lunch couldn’t get any easier!
