It’s time to make a dinner that the whole family will enjoy and this Slow Cooker Corned Beef and Cabbage really ticks all the boxes. Traditional Corned Beef can take a while to make, but when you make it in the slow cooker, it’s a hands-off process!
This is why I’m such a fan of the slow cooker because it is fix it and forget it, and you have a delicious meal when you are ready to eat. What is not to love about that?
I love this time of year and that I can get Corned Beef easily from the grocer, it is one of my favorite meals ever! So when I get the chance to make this recipe, I’m ecstatic.

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (FULL RECIPE BELOW):
- Packaged corned beef
- Carrots
- Baby Potatoes
- Low Sodium Beef Broth
- Pickling Spices from the corned beef
- Green Cabbage
- Whole grain mustard
- Fresh parsley
HOW TO MAKE SLOW COOKER CORNED BEEF AND CABBAGE:

Place the potatoes and carrots in the bottom of a 6-quart or larger slow cooker.

Place the brisket on top of the carrots and potatoes.

Pour the broth over everything, and add in the optional pickling spices that came with the corned beef.

Cover and place on high for 6 hours or until the meat is tender.

Add the cabbage wedges to the cooker and continue to cook 45-60 more minutes until the cabbage is tender.

Slice and serve the meat against the grain to serve so it is most tender. Serve with whole-grain mustard and fresh chopped parsley if desired.
CAN THIS BE OVERCOOKED IN THE SLOW COOKER?
As much as I hope I never overcook Corned Beef, I’m sure it does happen. You’ll want to ensure you don’t cook the Corned Beef past the recommended time in the recipe.
Fork-tender is a great way to know if it’s done. If you can take a fork, press it against the meat, and it comes apart, that’s a good indication that it’s ready!
HOW TO MAKE CORNED BEEF MORE TENDER:
When you have so much time into cooking Corned Beef, you don’t want to bite into it, and it be tough. There are some ways you can make corned beef more tender.
One of my favorite ways to make it more tender is to give it plenty of time to cook and doing it in the slow cooker makes it a low and slow cooking process, this always helps keep meat tender.
The other way to make sure it is tender is to cut it against the grain. Cutting it with the grain will produce long, strings of meat, and sometimes they are tougher to eat. When you cut against the grain, you are making the long string of meat into slices and those slices then fall apart in your mouth.
IS CORNED BEEF HEALTY?
While Corned Beef is a more traditional dinner for St. Patrick’s Day, it’s not considered the most healthy meal out there. It is rich in sodium, and you get your day’s worth of calories in just a few small portions.
Also, corned beef tends to be very fatty. It is made from beef brisket, and a layer of fat runs right through it.
I would recommend not overeating this Slow Cooker Corned Beef Dinner. After all, though, it is a meal that only comes around once a year for most people. Enjoy it as much as you can!
HOW TO STORE:
The best way to store this Slow Cooker Corned Beef Dinner is in an airtight container or ziplock bag in the refrigerator. This should last for about 3-4 days.
You can reheat it in the microwave or place it in the oven to warm back through when ready to eat. Freeze in a freezer-safe container for up to 3 months. To thaw, place the container in the fridge overnight.

- Make sure to buy Corned Beef pre-packaged with spices.
- The pickling spices are optional but highly encouraged.
- We do cook this on high and that is what we recommend and do not cool it on low.
- You can use other vegetables that you like, such as celery and onions as well in this recipe.
