Slow Cooker Chicken Burritos, chicken simmered in Mexican spices until fork tender with cilantro lime rice and various toppings make for one delicious healthy burrito!
When it comes to hearty meals that take minimal effort to make, these Chicken Burritos are where it’s at. Throw everything in the slow cooker and just wait.
I’ve been really using my slow cooker lately because we have been so busy and I love that I can have dinner ready for me when I get home, so it’s a no-brainer.
These Slow Cooker Chicken Burritos we have been making for years and they have always remained one of our favorite recipes to date, throw them together with my Cilantro Lime Rice and other toppings and you have yourself a meal.
These are super simple to whip up and they really are tasty, when I know that I am going to be busy for a few days we like to make a double batch and save some to use as leftovers.
I absolutely love leftovers, some may not agree with me but it works perfectly for our family when we are out running errands or working and we can just throw something together real quick.

WHY THIS RECIPE WORKS:
- With minimal pantry staple ingredients this comes together fast.
- You can easily double this recipe to serve more people or for leftovers.
- Top the Chicken Burritos with any of your favorite burrito toppings.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Chicken breasts
Cumin
Paprika
Onion powder
Garlic powder
Salt
Pepper
Chicken stock
Salsa
Cilantro lime rice
HOW TO MAKE SLOW COOKER CHICKEN BURRITOS:
- Place the chicken in the slow cooker.
- Sprinkle the cumin, paprika, onion powder, garlic powder, salt, and pepper on top of the chicken.
- Pour the chicken stock around the chicken and top with the salsa. Place the lid on the slow cooker and slow cook for 3-4 hours on high or 4-6 hours on low, until fork tender.
- Shred the chicken. Taste and adjust seasoning if necessary.
- Serve in burrito-sized tortillas with cilantro lime rice and your favorite burrito toppings.
This can’t get any easier, that is just one reason that we can’t get enough of these Slow Cooker Chicken Burritos. The Cilantro Lime Rice really adds to this recipe.
WHAT TOPPINGS SHOULD I USE?
There are various toppings that you can use, anything that you would top a taco or burrito with, some ideas include:
- Diced avocado
- Tomatoes
- Cilantro
- Sour Cream
- Cheese
- Black Olives
- Pinto or Black Beans
These are just some of the various toppings that we like to put on our Chicken Burritos, but like I said you can use whatever you like to top these!
HOW TO STORE:
This can be stored in an airtight container such as a Tupperware container or ziptop bag in the refrigerator for up to 4 days.
This can also be frozen, to freeze your Chicken Burrito mixture, let cool and then place in a freezer bag and store in the freezer, this should keep for up to 4 months.
To defrost, remove to the refrigerator and let sit overnight. To reheat you can place it back on low in the slow cooker or heat it up in the microwave until heated through.
TIPS AND TRICKS:
- Make sure you use burrito-sized tortillas for this.
- You can use any tortillas you like, low carb, flour, wheat, etc.
- Cilantro Lime Rice is not essential, you can use regular rice if you’d like.
- This can be frozen, see my tips above.
- Top with all your favorite burrito toppings, see some of my ideas above.
- This can be cooked on low for 4-6 hours or high for 3-4 hours.

Slow Cooker Chicken Burritos
Ingredients
- 2 pounds chicken breasts boneless skinless
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp onion powder

Instructions
- Place the chicken in the slow cooker.
