Roasted Corn and Avocado Salsa Cups

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 2 Avocados from Mexico medium dice
  • 1 ear of corn roasted on the grill until charred and cut off the cob
  • 1/4 cup tomatoes diced
  • 1/4 cup red onion fine dice
  • 1/4 cup cilantro chopped
  • 1/2 lime juice fresh squeezed
  • 2 large tortillas cut with a small round cookie cutter
  • Cooking spray

Instructions

  1. Preheat oven to 425 degrees. Spray the tortilla rounds with cooking spray and place into a mini cupcake tin. Bake for 3-5 minutes until golden brown. Take out of oven and transfer tin to a wired rack to cool. Set aside.
  2. Place avocado in a medium bowl and mix with the lime juice. Add in the remaining ingredients and mix with a spoon.
  3. Spoon the avocado salsa into the tortilla cups and garnish with more cilantro, serve and enjoy!

Preheat oven to 425 degrees. Spray the tortilla rounds with cooking spray and place into a mini cupcake tin.

Bake for 3-5 minutes until golden brown. Take out of oven and transfer tin to a wired rack to cool. Set aside.

Place avocado in a medium bowl and mix with the lime juice.

Spoon the avocado salsa into the tortilla cups and garnish with more cilantro, serve and enjoy!
