This Peanut Butter Chocolate Chip cookie recipe is the easiest, and most delicious go-to cookie recipe that I have come across.
Recipe makes about 3 dozen cookies
½ Cup Unsalted butter, softened
1 ½ Cups Brown Sugar
½ Cup White Sugar
½ Teaspoon Salt
2/3 Cup Peanut Butter (I use creamy)
1 ½ Cups of all-purpose flour
2 Teaspoons baking soda
2 Cups semisweet Chocolate Chips
1 Cup Peanut Butter Chips (optional-if used decrease amount of chocolate chips by ½ cup)
Preheat the oven to 350 degrees.
Cream together butter, sugars, salt, and peanut butter. I like to put everything in my Kitchen Aid Mixer and just let it mix for a few minutes.
Beat in eggs and vanilla and then add the flour and baking soda slowly.
Mix well. I use my hands to get everything thoroughly mixed.
Add the chips and mix until you can make balls with the dough.
I am not one concerned as much with how they look as long as they taste good, so perfect circles are not my way.
I scoop out about a tablespoon and put it on a greased cookie sheet about 2 inches apart. I don’t flatten them, I just pop them in the oven as is.
Bake 10-12 minutes (you want them to be darker around the edges but still look a little soft in the middle) and then cool on cooling rack.
I freeze my cookies because they last longer and they are delicious frozen!
