Ahhh, fall! The season of all things pumpkin and apples. To be honest, I’m more of an all things apple person. Growing up, one of my favorite snacks was apple slices dipped in peanut butter, yum!
My tastes haven’t wavered much, I will still have that same apple snack when the craving hits!
One thing that set me apart as a child was my love of fruits and vegetables. I remember other kids looking at me funny when I wanted a huge bowl of watermelon or when I would snatch fresh broccoli florets off the crudite platter.
At a young age, I was taught the importance of eating lots of fresh fruit and veggies and that has been ingrained in me my whole life. Childhood diabetes is no joke, and the first step in preventing that is teaching children at a young age the importance of a healthy lifestyle.
Eating healthy, exercising and decreasing screen time is where to start!
The percentage of people aged 12 to 19 who were obese increased from 5 percent to nearly 21 percent from 1980 to 2012, according to the U.S. Centers for Disease Control and Prevention. These children often suffer from Type 2 diabetes, high cholesterol, and high blood pressure–problems generally associated with adults.
But, like everything moderation is key. A great way to incorporate more fruit and veggies into children’s diets is to present them better options in fun ways; like peanut butter apple nachos!
When I saw these amazing caramel apple nachos from Butter with a Side of Bread, I just had to make my own version! Different colored apple slices, a yummy peanut butter sauce and mini chocolate chips with have those little hands ready to snatch up this snack! Plus, it’s perfect for fall, amiright??
Peanut Butter Apple Nachos
- 1/8 Cup light brown sugar packed
- 2 Tablespoons butter unsalted
- 2 Tablespoons light corn syrup
- pinch of salt
- 1/8 Cup peanut butter smooth
- 2 Tablespoons milk
- 1/2 teaspoon vanilla bean paste or extract
- 2 apples quartered and sliced, seeds and stem removed
- 2 Tablespoons mini chocolate chips
- Whisk together brown sugar, butter and corn syrup in a small stock pot. Bring to a boil over medium heat stirring occasionally. When it reaches a boil, take off the heat and add in the peanut butter and the milk, whisk to combine. Bring to a boil again over medium heat. Take off heat, whisk in vanilla, let cool to room temperature.
- Arrange apple slices on a platter, pour peanut butter sauce on top. Garnish with chocolate chips.
Super simple recipe! The peanut butter sauce will go well over lots of things or use as a dipping sauce instead.
