Hi, I am Rosemary from  An Italian in my kitchen.  I spent my first 29 years of life growing up in Canada until I met my future Italian husband.  I relocated to Rome Italy and for the past 23 years and counting I call Rome my second home.  I have learned to cook authentic Italian recipes from my 2nd family, friends and anyone I encountered who might be open (and thank goodness Italians are very open) to my “how do I cook that?”  This is probably one of the first recipes I ever made on my own and which is also my youngest daughter’s favorite.  So I hope you enjoy it too.

Pasta all’Amatriciana {Tomato Sauce with Pancetta}

Ingredients

  • 3/4 cup chopped pancetta
  • 2 tablespoons olive oil
  • 1/4 cup water
  • 1 clove of garlic chopped
  • 1 can diced tomatoes with juice just canned tomatoes, nothing added normal size not the large can
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/4 teaspoon salt
  • pinch or more of hot pepper flakes
  • 1 cup water

Instructions

  • In a medium pan add the 2 tablespoons olive oil, pancetta and 1/4 cup water, cover and cook over medium heat till pancetta is cooked (not over cooked or crisp) and water has evaporated (approximately 10 minutes).
  • Uncover and add garlic, can of tomatoes, oregano, basil, salt, hot pepper flakes and 1 cup water. Stir to combine, place lid on pan but leave a small space uncovered, continue cooking over medium heat, stirring occasionally for approximately 15-20 minutes, until thickened.
  • Add 3 cups cooked pasta, toss together gently till well combined. Serve immediately, top with freshly grated parmesan cheese if desired. Enjoy!

      Hi Sandi, Thanks, I asked a friend of mine whose daughter can’t eat gluten and she said that pancetta is ok, so I hope you try it and like it.
