Hi, I’m Wanda Ann from Memories by the Mile and I’m happy to be back here with you. Today I’m sharing my Orange Greek Salad.
Orange Greek Salad
I love springtime, the smells, the colors, the flavors. Everything is new and coming to life after a winters sleep. The tree’s are blossoming and getting the leaves and the grass is turning green and the flowers, all my favorite flowers in one season. The lilac’s, daffodil’s, and tulips, what’s not to love about spring! Salad’s also say springtime to me. We all want to start eating lighter and get out and enjoy the nice warmer weather.
Making a salad and adding what’s in season is a fun way to bring flavor and beauty to your table. Right now the oranges are perfect. They’re juicy and sweet, added to all the things that I love about a Greek salad and it’s the perfect combination. Adding this light and fragrant Orange Vinaigrette and the flavors just pop!
Orange Greek Salad
Ingredients
- 2 cups Romaine
- 2 cups spring greens
- 2 oranges
- Grape tomatoes cut in half
- Kalamata Black Olives
- 1 Avocado
- 6 oz. Feta Cheese
Instructions
- Peel and section orange and cut sections in half. Add all ingredients and mix together. Crumble Feta cheese and add to salad and gentle toss.
