Happy February! (Okay, I’m three days late, so shoot me!) As you know by now, a new month equals a new series! It’s still winter so we wanted to bring you some warm and comforting dishes. But, let’s face it, soups are a great go-to meal year round!

Happy February! (Okay, I’m three days late, so shoot me!) As you know by now, a new month equals a new series! It’s still winter so we wanted to bring you some warm and comforting dishes. But, let’s face it, soups are a great go-to meal year round!

Throw everything into a pot, forget about it and BAM deliciousness awaits! So, in the month of February you can expect a brand spanking new soup recipe every Tuesday, get excite!

Today’s recipe for Mexican Chicken Soup is placed with Latin flavors and very filling. Loaded with chunks of chicken, corn and black beans ladled over rice is really a great dish to make on the weekend to reheat for lunch. OR, it’s great for those chilly winter nights as well.

I really love how this Mexican Chicken Soup is customizable to your taste. You can garnish it with your favorite toppings! Pictured here, mine has slices of avocado, jalapenos and cilantro. BUT, you can go nuts and add in some salsa, sour cream, scallions, crushed tortilla chips, sriracha or anything your heart desires!

Mexican Chicken Soup

Prep Time 5 minutes
Cook Time 1 hour 30 minutes

Ingredients

  • 2 split chicken breasts WITH bones and skin
  • 2 32 oz boxes chicken stock
  • 1/2 large onion peeled and cut into 4th
  • 6 oz baby carrots or two medium sized carrots, large chop
  • 1 celery stalk large chop
  • 5 cloves garlic skins removed and smashed
  • 1 10 oz can rotel I used mild, but use what heat you like
  • 15 oz can black beans drained and rinsed
  • 1 ear corn cut off the cob
  • 2 Tbls chicken bouillon
  • Garnishes: chopped cilantro lime wedges, cooked rice, anything else you love!

Instructions

  1. Place the chicken, stock, onion, carrots, celery and garlic into a large stock pot. Bring to a boil, cover and reduce to a simmer for 1 hour. Stir occasionally to make sure nothing is sticking on the bottom.
  2. Strain stock into a bowl and return to the original stock pot, place back on medium heat. Take chicken and shred the meat, discarding the bones and skins and the other vegetables that were strained.
  3. Place the chicken meat back into the broth and add in the rotel, black beans, corn and bouillon. Let simmer for 30 minutes, adjusting seasoning if necessary.
  4. Serve on top of a scoop of rice and garnish as desired, enjoy!

A few tips: For this recipe, I drained out the carrots, celery, onion and garlic with the chicken. I, personally, am not a fan of soups with big chunks of veggies like those it in, but I wanted to extract their flavors. If you like a more veggie packed soup, by all means, small dice the veg and just let it all simmer away. THEN, just remove the chicken breats, shred the meat and discard of the bones and skin.

Also, I hate… HATE diced can tomatoes in soups and dishes. Just… ick. SO, I took the can of rotel and pureed it with an immersion blender first then added it to my broth, yum!

I’m having it for lunches this week, it doesnt make me overly full but it’s full of good for you yummy stuff! I love it! It’s originally my Mother’s recipe with a few little tweaks.
