Not only is it the Holiday season it’s the Holiday PARTY season! I think I have said this about 100 times before but I loooove appetizers! From previous recipes on here, I love to make little bites of food. It’s so fun to go around sampling all the different flavors and cuisines!

One cuisine I think almost everyone enjoys is Italian. It is very hearty, warm and comforting. I think today’s recipe for Meatball Sub Cups would be such a fun and cute party appetizer! OR, have them for a super fast weeknight meal at home!

To save on prep time for parties, I suggest picking up some frozen meatballs. They are super fast and convenient. I found these Mama Mancini meatballs at my local Walmart while doing my weekly shopping trip!

They made for a super quick meal and I’m definitely serving these at our Christmas Eve get together!

Meatball Sub Cups

Ingredients

  • 1 pkg. Mama Mancini’s Meatballs I used the beef flavor
  • 1 Can crescent roll dough
  • 4 slices provolone cheese I like the non-smoked for Italian dishes like this

Instructions

  • Set the package in the fridge the night before to let the meatballs and sauce thaw.
  • Slice the meatballs in half and then cook in the sauce on the stove top to the back of the box directions. Preheat oven to 375 degrees.
  • While the meatballs are cooking, make the crescent roll cups by rolling out the dough completely. There will be four sections of rectangles with two crescents in each. Smush together the seams of the dough then cut into even four squares. Cut squares into four even strips. Criss-cross the strips of dough in a cupcake tin. Repeat until all the cups are full.
  • Place one half of a meatball round side up in each cup. Cut each piece of provolone cheese into fourths. Lay one piece on top of each meatball.
  • Bake for 11 minutes or until the dough and cheese is golden brown. Serve with the tomato sauce, enjoy!
