This low carb panna cotta recipe is keto-friendly and delicious. I brought this to a family bbq this summer and it was a hit! With just a few simple ingredients, whip up this rich and creamy Italian dessert in no time!
What is Panna Cotta?
Did you know Panna Cotta means “cooked cream” in Italian? Makes sense, as it is basically just a mixture of sugar and cream.
The simplicity of the name matches the recipe with just a few ingredients and steps.
I usually follow an old family recipe but an upcoming vacation had me smack dab in the middle of the keto diet, so I had to make a few adjustments.
Unflavored gelatin luckily is keto-friendly, and substituting sugar is a breeze thanks to swerve sweetener! Which makes this one of our favorite dessert recipes.
Why this recipe works:
- With minimal ingredients it’s a breeze to whip up.
- You can easily halve or double this recipe depending on how many you are serving.
- The ingredients are available in the health food section of your grocer or easily available to order off Amazon.
How to make Low Carb Panna Cotta:
- The first step is to dissolve the gelatin in water on a stovetop. A good way to eye how long to let it simmer is to look for steam. As soon as the mixture starts steaming, stir, and remove from heat.
- In a separate saucepan, bring sugar, half and half, cream, and vanilla to a boil. Make sure to stir often. I never skipped this step and I’m not about to find out what happens if we do! Once that starts to boil, remove the pan from heat and stir in the gelatin mixture.
- Next, pour it into 8 ramekins. Side note, this is the part of the recipe where I wonder why I have so many ramekins. Please reassure me below I’m not the only one.
I have this habit of “stacking” desserts.
I strongly believe its not possible to have too much of a good thing when it comes to sweets. I mean, peanut butter is good on its own but add jelly and BAM.
Brownies, also amazing by themselves, but add caramel sauce and it’s a whole new ballgame. Therefore, you are definitely going to want to add a sweet berry sauce on top of this panna cotta.
Don’t worry, it’s just as easy to make. Throw some of your favorite berries into a saucepan with water and swerve and let it simmer for a couple of minutes.
How to store Low Carb Panna Cotta:
I like to put this together the night before. Having something sit in a fridge overnight gives me a false sense of security the next morning that it will set “harder”, whatever that means.
That gives me just the right amount of confidence I need to flip those bad boys out of their ramekins the next morning and step back proudly as they completely hold their shape.
One trick I have learned is to dip the ramekins in warm water, and trace a knife along the edge. These are fun to serve in wine glasses, on a tapas plate, or enjoy straight from the ramekin. Nobody is judging here.
Tips and Tricks:
- This needs time to chill, we find it best chilled overnight.
- To easily remove dip your ramekins in warm water and trace a knife along the edge.
- This recipe can be halved or doubled depending on how many people you are serving.
- This is served great on it’s own or include some berries alongside like pictured.
- Make sure your gelatin is dissolved fully, once it’s steaming is a good sign that it is dissolved.

Low Carb Panna Cotta
Ingredients
- 2 tablespoons cold water
- 1 envelope unflavored gelatin
- 1/3 cup xylitol
- 1 cup half and half
- 2 cups heavy cream
- 2 teaspoons vanilla extract
Instructions
- In a small saucepan, add the water and gelatin, stir to combine. Place over medium-low heat and stir until dissolved about 1 minute. Set aside.
- Add to another saucepan the sugar, half and half, and cream. Bring to a boil, stirring often. Remove from heat once it comes to a boil. Remove from heat and stir in the gelatin mixture and vanilla. Pour into 8 ramekins or muffin tin.
- Let cool on the counter for 10 minutes. Place in the fridge for at least 5 hours, or up to overnight.
