I love this time of year! It’s really starting to get chilly here in Florida (finally!) and that means I get to bust out a few of my favorite comfort foods! One of them being my homemade chili recipe! I really wanted to think of a way to use my batch of chili through out the week without getting burnt out on it. So when I was thinking of what twist I can make on it, it dawned on me! Potatoes go amazing with chili, why not make shredded hash browns into potato pancakes, top them with chili, cheese, sour cream… the works! That’s how this amazing meal was created my friends!
Loaded Potato Pancakes with Shredded Hash Browns
So, when we were off on our weekly shopping trip to WalMart I picked up a bag of Ore Ida Shredded Hash browns to make my life easier.
You know, Hash browns from Ore Ida aren’t just for breakfast! You can really use them in tons of different ways and really make this holiday season a breeze! They are already cut, washed, peeled, ready to be put into your favorite recipes! While doing your Holiday entertaining don’t you want to be with your guests and not slaving away peeling potatoes?
While picking up my bag of Ore Ida Shredded Hash browns with special Disney’s Frozen packaging at WalMart there was an in store demo taking place. During the demonstration we were shown a recipe to make with the hash browns. I love when WalMart has demos in the store. Not only do I get to sample the item before I buy it but I get inspired to try recipes of my own!
Here is my inspired recipe from the demo:
Loaded Shredded Hash browns Potato Pancakes
Ingredients
- For the potato pancakes:
- 1/2 bag Ore Ida Shredded Hash Browns
- 2 eggs
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp ground cumin
- Salt and pepper to taste
- For the toppings:
- 8 cups chili
- 2 Cups cheddar cheese blend
- 1 Cup sour cream
- 2 scallions green part only, sliced
Instructions
- Let the hash browns defrost. Season with dried spices. Beat eggs in a separate bowl and mix together with the potatoes.
- In a skillet over medium heat spray with cooking spray and form patties. Let cook covered until golden brown on bottom side, about 5 minutes. Flip and repeat covered.
- Serve with 1/2 cup of the chili per pancake, cheese, sour cream and scallions. Enjoy!
Step by Step Instructions

Let the hash browns defrost. Season with dried spices. Beat eggs in a separate bowl and mix together with the potatoes.
