Comforting Meatloaf

Hi guys! It’s finally been feeling more like Christmas around here and I believe we will be getting another cold front hitting us here in Florida again soon. Cold nights like these I just want to curl up on the couch under my blankie and eat something super comforting and delicious. Hubby and I love this recipe for meatloaf and it was just the thing we needed last night! Here’s my comforting meatloaf, I hope you enjoy!

Comforting Meatloaf Recipe from ThisSillyGirlsLife.comIngredients:

1 pound                         Ground Beef, I use ground chuck

1 ea                               Egg

2 tsp                             each: Onion Powder, Garlic Powder

1 tsp                              Lemon Pepper

1/4 Cup                        Bread Crumbs, I prefer Italian seasoned panko style

2 Tbls                          Worcestershire Sauce

1 Tbls                          Ketchup, more for glaze

Salt and Pepper to taste

 

Preheat oven to 350 degrees. Place ingredients in a bowl and thoroughly mix with hands. Place mix into an oven safe dish and form into a loaf.

Brush on enough ketchup to cover entire loaf, about 1/4 cup.

Place in oven uncovered and cook until well done. Until thermometer reads 165 in center, around 30-45 minutes.

Yea, it doesn’t look the prettiest when it first comes out, but the taste makes up for it! Could dinner get much easier than this? I’m not too sure… I served it with loaded baked potatoes, YUM! Great dinner if I do say so myself! Thanks for reading!

    I just love your recipes! Meatloaf has always been a favorite of mine, but I forget to make it. This is just what I needed to fill out my week -to weekend. I like to make sandwiches -if- any is leftover.
