How can you tell if Gorgonzola is bad?
It’s important that you use fresh ingredients that haven’t gone bad when it comes to making this tomato tart recipe.
The best way to tell if your Stella® gorgonzola cheese has gone bad is to read the expiration date on the container.
If the date is rather close or just passed as of yesterday, simply put your nose to your Stella® gorgonzola cheese and take a sniff.
If gorgonzola cheese smells like ammonia, then it’s gone bad and will need to be replaced in order to make your tomato tart.
How Do I Make Tomato Tart?
Following my step-by-step instructions below, you’ll be well on your way to creating your own tomato tart recipe at home.
I have included ingredients and instructions to make the tomato tart pastry crust from scratch, as well.
You can cut some time out of the process of making your own tomato tart by purchasing pre-made pastry crust to use in your tomato tart.
I simply prefer to make my entire recipe from scratch as it always seems to satisfy guests who’ve tried my tomato tart before.
Here’s how you make your own Heirloom Tomato Tart Recipe using Stella® Gorgonzola Cheese
Heirloom Tomato Tart
Ingredients
For the pastry crust
- 1 & 1/4 cup all-purpose flour
- 1 tablespoon + 2 teaspoons cornstarch
- 1/4 teaspoon kosher salt
- 1 tablespoon fresh thyme chopped
- 6 tablespoons unsalted butter cold, small dice
- 1 large egg
For the filling
- 1/3 cup chive and onion cream cheese softened
- 2 large heirloom tomatoes* 1/4 inch slices, stem removed
- 1/3 cup crumbled Stella Gorgonzola
- 1 tablespoon fresh thyme chopped
- 1 tablespoon olive oil for garnish
Instructions
For the crust
- In a food processor, add the flour, cornstarch, salt, and thyme. Pulse a few times to combine. Add in the butter about 1/3 at a time and pulse in between additions a few times to make sure it is evenly distributed. After all the butter is added, pulse until very small crumbs are formed. Add the egg and pulse until incorporated, the mixture will not resemble a dough ball but when pinched together it will stay.
- On a clean work surface, gather the dough into a ball, press it into a 9-inch tart shell all the way up the sides of the pan. Place in the fridge for 30 minutes.
For the filling
- Preheat the oven to 375°F. Spread the softened cream cheese into the bottom of the tart. Top with the tomato slices in whatever pattern you like. Sprinkle on the gorgonzola cheese and thyme.
- Bake for 35 minutes until the crust is golden brown and slightly pulling away from the edges. Let cool on a wired rack for at least 10 minutes. Garnish with the olive oil and serve!
