Ugh, it has been a while since I have eaten these beauties but the flavor is still haunting me. Moist and extremely tender filets, seared in an extremely hot cast iron skillet while basted in butter and garlic cloves.

As if that isn’t good enough, they are finished over smokey charcoals to your desired internal temperature. It is a flavor explosion!!

While visiting my family a few weeks back, my Dad wanted to make these filets and we came up with the technique just before cooking them. This is definitely a new go to method!

Ingredients

  • 2 lbs steaks we used filets but any tender cut will do
  • 6 cloves garlic peeled and smashed
  • 1/2 stick 4 Tbls butter
  • 1 Tbls vegetable oil
  • kosher salt and pepper to taste

Instructions

  1. Let steaks sit out on counter and bring to room temperature, about 30 minutes. This will ensure even cooking. Generously season with salt and set aside.
  2. Heat oven to 500 degrees, place cast iron skillet in oven for 10 minutes until screaming hot. While waiting for the skillet to get hot, get your charcoal grill ready and prepped.
  3. When the skillet is hot and the grill is ready you are ready to cook the steaks. This is a very fast process to make sure you have all your ingredients with you.
  4. Take out cast iron skillet CAREFULLY with thick pot holders to protect hands. Place on a burner on the stove over high heat and add the oil. Immediately add the steaks. Let sear about 1 minute on first side, turn over with tongs and add the butter and garlic. With a spoon, start ladling the butter over the steaks about another 2 Minutes. Transfer everything outside to the grill and place steaks over coals, season with pepper. Now you will finish them to your desired temperature, keep basting them with the butter mixture but be cautious of flare ups. Serve and enjoy!

Alternatively, you could completely skip the charcoal grill step. They will still be extremely delicious!! I thought this would make an amazing Christmas dinner!!

    These look completely amazing! I had dinner with friend’s and they too used melted butter on their steaks before grilling. I was shocked at how fabulous they were!

    I read a while ago about using butter on steak and have been doing it ever since- it is truly amazing!! I usually sear them in the pan and transfer to the oven, but I bet the grill is awesome. I’ll have to try that when (in a very very very long time from now!) the weather turns warm again.
