Yummmmm! You all know there is nothing I love more than little bites. Desserts, appetizers, all mini finger foods… I adore them all! Since this month starts a new series; Thanksgiving Recipes, I wanted to start off with a super decadent bite perfect for the Holiday!
Creamy Cranberry Pancetta Bites, flavored goat cheese in phyllo cups with whole berry cranberry sauce and crispy pancetta!
Yummmmm! You all know there is nothing I love more than little bites. Desserts, appetizers, all mini finger foods… I adore them all! Since this month starts a new series; Thanksgiving Recipes, I wanted to start off with a super decadent bite perfect for the Holiday!
What I especially love about these Creamy Cranberry Pancetta Bites is there is pretty much every nuance of flavor in one little morsel. Sweet, Salty, Tart and Savory, creamy and crispy all at the same time!
That’s what I think also makes a perfect bite, having a hint of all the flavors and textures available. The only thing missing from these is a little heat, and feel free to add it if you wish!
Creamy Cranberry Pancetta Bites
Ingredients
- 8 slices pancetta thin slice
- 1 package 15 each phyllo cups
- 6 oz goat cheese softened
- Whole Berry Cranberry Sauce about 1/4 cup
- 1 Tablespoon scallions thinly sliced
- 1 Tablespoon half and half or milk
- 1/4 teaspoon fresh rosemary extremely fine chop
- 1/4 teaspoon garlic powder
- 2 cracks fresh black pepper
Instructions
- Preheat oven to 350 degrees. Place pancetta slices on parchment paper lined sheet tray. Cook in 350 degree oven 15-18 minutes until crisp. Place pancetta slices on paper towel to drain off the excess fat and let cool.
- Place goat cheese, scallions, rosemary, garlic powder and black pepper in a small bowl. With a spoon, stir to combine. Add in the half and half or milk and mix to thin the mixture slightly.
- Pipe into phyllo cups (you can place cheese mix into a zip lock bag and snip off the end of one corner), you may have some leftover, save it to spread on bagels, YUM!
- Place about a teaspoon of cranberry sauce on top of cheese. Top with half a slice of the pancetta, you can stick it into the cheese mixture like pictured or crumble on top. Serve immediately, enjoy!
These are so easy to put together and the recipe can be easily made for a large crowd! Be warned: this little babies pack a HUGE flavor punch! DO NOT ADD ADDITIONAL SALT! Seriously, don’t these are already quite salty.
They are just packed with strong flavors, rich and creamy and delicious. I would say about two of these per guest would be enough… (although I just ate 5 so…. use your discretion lol).
The cranberry sauce is a must, it plays so well with the strong flavors of pancetta and goat cheese. It gives a subtle sweet and tartness to this dish.
I think they are just so beautiful too and impressive looking although they are hardly any effort at all! You of course, can just crumble the pancetta on top, it will be much easier to eat that way. But, if you want a dramatic presentation like I love, go with the height!
