They are so good, I could eat the whole batch in one sitting. If you add honey and butter, I would choose these over cake. What makes them so special, you ask? Yes, it’s the black pepper. But don’t you dare just go dump regular black pepper in these! What you need is cracked black pepper. You can make this yourself by getting black peppercorns (sold in any store in the spice section) and pulsing them in a blender.

I tried cracking these in my little Ninja blender. I pulsed and pulsed, and never got the desired result. So I put new, whole peppercorns in my Blendtec to see if it would work any better. This is what the peppercorns looked like after a single pulse in my Blendtec. Much better!
See those large chunks of black pepper? Don’t be scared. They are marvelous! (But please resist the urge to take a big whiff when you take the lid off your blender. Just trust me on this). They give you big bursts of flavor as you eat these biscuits. If you just added regular ground pepper, the flavor would be muddied and not nearly as good.
First, you mix the dry ingredients together, then cut in some butter. The dry biscuit dough should look something like this:
Those chunks of butter are just fine. Then you add some milk and mix just until everything is moistened. Don’t over-mix. You don’t want to start developing gluten, which will make your biscuits tough. Then I use a large cookie scoop to put the dough onto a pan with a silicone baking mat.
Bake in the oven until the tops start getting brown. After removing them from the oven, slather some butter and honey on these warm biscuits, and you can just skip dinner and dessert altogether. They are that good.

Ingredients
- 3 c. flour
- 2 tsp. sugar
- 1 Tbsp. baking powder
- 2 tsp. cracked black pepper
- 1 tsp. salt
- 1/2 c. butter one cube cut into chunks
- 1 c. cold whole milk I just use whatever I have on hand, which is usually skim, but I'm sure it's better with whole
Instructions
- Heat oven to 425 degrees. Line baking sheet with parchment or a silicone baking mat, or use ungreased stoneware. In a large bowl, whisk together the flour, sugar, baking powder, pepper and salt. With a pastry blender or two knives, cut the butter into the flour mixture until you have coarse crumbs with some pea-sized pieces. Stir in milk just until soft dough forms. Do not overmix. Spoon onto baking sheet or stoneware (I use a large cookie scoop).
- Bake for 15-17 minutes, depending on the size of the biscuits. Tops should start to brown. Remove from oven and brush tops with melted butter if desired.
