Chocolate Pretzel Ice Cream Sandwiches, bite-sized ice cream sandwiches using chocolate covered pretzels!
Ahhh summer! Summer to me equals lots of ice cream, late night bonfires, and finding ways on how to cook without turning on the oven!
I love to have yummy treats around the house that will one, cool us off and two… just having a fun nibble here or there never hurt anybody! My favorite hot weather treat is ice cream with The Original Bomb Pop® at a close second!
A scoop of ice cream is always a go-to especially with these fun flavors from Blue Bunny® that I found at WalMart!
Cheesecake ice cream?? Come on!
Blue Bunny® Cherrific Cheesecake to be exact. And Mint Cookie Crunch, and Bunny Tracks®, oh my!
But, you know me I can’t just let anything be. I have to elevate it just a touch.
Chocolate Pretzel Ice Cream Sandwiches, anyone??
I think that you can guess this is one of those non-recipe-recipe types of posts that I love! Literally two ingredients. Store bought chocolate covered pretzels and ice cream of your choice. Boom. Done. Time for that bonfire!
You, of course, can make your own chocolate covered pretzels, go nuts! But, I tend to get a little lazy during these hot months.
Just get a pretzel, top it with about a teaspoon of whatever Blue Bunny® ice cream you are feeling that day and place another pretzel on top. You might think it is easier to do this if the ice cream is slightly melted. But, I came across that if it is fresh out of the freezer it works best and doesn’t get as messy.
After you make as many sandwiches as you want, pop it back in the freezer for about an hour. This will just make sure the ice cream is nice and set up. Then, dig in!

- Blue Bunny® ice cream of your choice

I like a variety of flavors and textures so I made three different kinds of sandwiches. It’s fun to mix and match!
You can really use any flavor of Blue Bunny® ice cream you want for this treat. I think chocolate pretzels go with all their flavors!
I’m going to have to try Monster Cookie Mash, PB ‘N Cone™, and Toffee Brownie Twist™ next!
