Hi Lovelies! I have another recipe and there is nooo pork in it! YAY, are you excited?! LOL, seriously I know I have really shared my share of pig recently so today I have this chicken parmesan subs recipe! Oh, and it’s on garlic bread! *drool* See for yourself!
Ingredients
1 Chicken Breast Boneless, skinless
2 Chicken Thighs Boneless, skinless
2 Chicken Tenders
2-3 Cups Marinara Sauce
4 each Provolone Cheese Slices
2 Cups Panko Breadcrumbs
2 each Eggs
2 Tbls Parmesan Cheese
1 tsp Garlic Powder
1 tsp Onion Powder
4 Tbls All-Purpose Flour
2 each Garlic Bread, frozen
Fresh cracked pepper to taste
Vegetable oil for frying
Directions
Pre-heat oven to temperature needed to cook garlic bread. If needed, trim the skin off your chicken pieces. Filet the breast in half. To do this lay the breast flat on the cutting board and with your knife make short strokes through the breast with your knife until you have two even pieces. The chicken will look like this:
Place chicken pieces in a bag with half of the onion powder, half of the garlic powder and some fresh cracked pepper. Work the pieces around in the bag until they are evenly coated in spices. Add flour to the bag and make sure to close it securely. Take the bag and toss it around until the chicken is evenly coated in the flour. Get a bowl and crack the eggs into it. Add about 1 Tbls of water and whisk the eggs thoroughly. On a plate place the breadcrumbs, the rest of the dried spices and the parmesan cheese. Mix breadcrumb mixture until spices are evenly distributed. Place a deep sided pan on the stove on medium heat. Add oil until it is 2 inches up the side of the pan. When oil is heated place chicken pieces one by one first in the egg mixture and then in the breadcrumb mixture until they are evenly breaded all around. Shake off excess breadcrumbs and place carefully into hot oil. Do this so the chicken pieces do not touch in the each other, you may have to cook the chicken in batches.
When chicken is done cooking place on a cookie sheet that is lined with a cooling rack. When chicken is cooking heat up marinara sauce. Cook garlic bread to directions on package. Place a little marinara on top of each piece of chicken. Place half slice of provolone on top of marinara. When garlic bread is done, take out of oven and let sit on counter until ready to assemble sandwich. Place oven on 350 degrees. Place chicken in oven and cook just until cheese is melted on top, about 5-8 minutes. Take out of oven.
Now we are going to assemble the sandwiches. Cut chicken into pieces so it will fit nicely on the bread. Layer chicken pieces on bread.
Place top of bread on sandwich and cut into pieces. Serve with extra marinara sauce for dipping! We just had a salad to start and it was more than enough food. This recipe will easily feed 4-6 people or more if you add another side. I made too much chicken for just the two of us and had to eat this for lunch the next day, I know, tragic isn’t it?! 😉 LOL, it was still good for lunch! I hope you enjoyed this recipe!
