Would you be shocked to know, after looking at these pictures that I’ve never made a quiche before this one?! *gasp!* I KNOW!

That right there tells you how incredibly easy they are to make! I’ve come to realize they are basically a great “clean out the fridge” meal; just throw all your left overs and scraps together, whisk in some eggs and bam! An easy, delicious, meal!

That right there tells you how incredibly easy they are to make! I’ve come to realize they are basically a great “clean out the fridge” meal; just throw all your left overs and scraps together, whisk in some eggs and bam! An easy, delicious, meal!

I really think they would fit in at any meal time as well. Be it breakfast, brunch, lunch OR dinner!

I made this bad baby as an entry into the “Chopped at Home” contest presented by Sargento®. I was given the task of making a recipe that had to include the following ingredients:

  • Kale
  • Bacon
  • Oyster Crackers

Just like the show Chopped on the Food Network (which is one of my favorite shows, btw!), I HAD to use these four ingredients. So I got to thinking, I came up with a few ideas on how to play with the ingredients but settled on this quiche.

I’m so glad I did too, it’s nice and hearty. It keeps in the refrigerator well, so I’ve been slicing off a piece for my lunch. So, there’s a tip right there, make this the day you’re cleaning out your fridge. Keep it to eat off for the next few days, score!

Want to hear another shocker? I have never ever eaten kale before. Never. So, I was finally forced into trying it with this recipe, and boom, I like it! Yay for trying new things, lol.

Cheesy Bacon and Kale Quiche

Cheesy Bacon and Kale Quiche

Ingredients

  • 1 Cup oyster cracker crumbs about 1 1/2 Cups whole crackers
  • 5 Tablespoons unsalted butter melted
  • 5 slices bacon cut into 1/4 inch pieces
  • 1/4 Cup onion small dice
  • 1 Cup potato medium dice
  • 1 teaspoon fresh thyme leaves
  • 2 Cups kale
  • 4 eggs
  • 3/4 Cup milk
  • 1 1/2 Cup Sargento® Chef Blends 4 State Cheddar
  • Salt and pepper to taste
  • Parsley for garnish optional

Instructions

  1. Cook the bacon by heating a skillet over medium heat, cook until crispy, set aside. Reserve bacon fat.
  2. Preheat oven to 350 degrees. Place oyster cracker into a food possessor. Process until they form crumbs. Mix in the melted butter and press into a 9 inch pie dish. Bake for 10 minutes.
  3. Pour half of the bacon fat back into the pan. Saute the onions until translucent about 5 minutes. Add in the potatoes and toss to coat in the drippings. Pour about a tablespoon of water into the pan and cover, allowing the potatoes to steam. Check every few minutes until potatoes are almost cooked all the way through. Add in the thyme, then the kale and wilt it down. Taste and season if necessary. Take off the heat and let cool slightly.
  4. In a medium sized bowl, add in the eggs and lightly beat. Add in the milk and beat until combined. Add int he kale mixture, bacon and 1 Cup of the cheese. Mix to combine. Pour into cracker crust. Pressing down so there is an even layer. Top with the remaining cheese, and garnish with parsley leaves if desired (I liked the presentation). Bake for 35 minutes or until a knife inserted into the center comes out clean.
  5. Let cool for 10 minutes on the counter top, serve and enjoy!

Do be careful with how much salt you add, the bacon along with the cheese adds a lot already.
