Hi guys! I have a great recipe for you all today that I actually made for the first time but was really great! Broccoli and Cheese Stuffed Chicken Breast. It’s super easy and should be a real crowd pleaser! Check it!
You will need (ingredients listed per each individual chicken breast):
1 ea Chicken Breast, bone less, skinless
3 Tbls Shredded Cheese, I used Colby Monterrey mix
5 ea Broccoli florets, small, I used frozen and let them thaw completely, you can use fresh make sure they are lightly blanched
Skewers
Salt, Pepper, Paprika to taste
Preheat oven to 350. Take chicken breast and make a slit through the center, knife running parallel to the cutting board. Don’t cut through all the way, leave a little attached, fold over.
Place into a zip lock bag and gently pound chicken until 1/2 inch thick.
Take out of bag and season with salt and pepper. Layer the cheese and broccoli pieces inside chicken.
Separate the broccoli pieces if they look like they won’t fit. Then, gently roll everything in a little bundle and secure with a wooden skewer. Season with more salt and pepper and paprika.
Heat dutch oven on stove top over medium high heat. Sear off chicken bundles in enough oil to coat the bottom of the pan. When all chicken is seared nicely lay in dutch oven.
Place this into oven and cook until thermometer placed in center reads at least 165 degrees. Takes around 15 minutes. I served mine with a quick pasta dish, sauteing garlic, sliced tomatoes, broccoli in the chicken drippings and a little butter. Adding white wine and some chicken stock, reduced down and tossing pasta in sauce. Very light and flavorful dish! I hope you enjoy!

So I’m a noob at cooking, so I have a question. Do you cook it lightly on the stovetop in a pan before placing it in the oven?

LOL, yes all you do is get the pot very hot over medium heat on the stove top and place the chicken in and let it sit there until it just gets a golden color on the outside, then place in the oven. Thanks for asking, never hesitate!

You only sear the outside on the stove until it is golden brown. Then pop it in the oven to cook through. Thanks for stopping by!
