Nothing beats waking up to a hot and hearty breakfast. The smell of bacon frying and all that cheesy goodness, don’t forget that runny yolk, makes these Breakfast Bagel Sandwiches one recipe your family will ask for on repeat.
We are a big breakfast family, always have been, and always will be. There is just something about it that is warm and comforting for us.
I’ll make breakfast for a dinner a lot around here because it is just an easy, comforting meal I can put together on autopilot. Not much thinking is needed, LOL and I absolutely love that after a long day.
But, let’s face it, even we get into a breakfast rut from time to time. That’s why I absolutely love this sandwich, and it’s easy enough to throw together in a pinch but special enough that you won’t get sick of it.
There is really nothing not to like if you are obsessed with all things breakfast like we are. Bagel, check, bacon, check, cheese, check, and runny yolk? CHECK! Yes, please!

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (FULL RECIPE BELOW):
- Everything bagels
- Salted butter
- American cheese
- Vegetable oil
- Large eggs
- Kosher salt
- Black pepper
- Red chili flakes, optional
- Splash of water
- Thick-cut bacon
- Hot sauce, optional
HOW TO MAKE BREAKFAST BAGEL SANDWICH:
- Place the oven or toaster oven broiler on high. You can use either appliance for this recipe. If using the oven, place the oven rack in the second position under the broiler.
- Cut the bagels or separate the two halves and place them cut side up onto a sheet tray. Using a knife, spread the butter evenly over the bagels.
- Place the buttered bagels under the broiler. Allow them to toast to golden brown or until it has reached your desired shade. Take them out of the oven.
- Take the American cheese slices and place them onto the bottom half of each bagel. Set aside while you make the eggs.
- Place a medium-sized nonstick skillet on the stovetop over medium heat. Add 1 tablespoon of the vegetable oil to the pan. Once hot, add two eggs.
- Sprinkle the salt, pepper, and chili flakes, if using to taste, over the eggs. Cook for 1 minute. Flip the eggs and season them again.
- Place one slice of American cheese on top of one of the eggs. Add a splash of water to the pan and cover. Cook for 30 seconds for runny yolks or until your desired cook on the eggs. Take off the heat.
- Place 2 slices of crispy bacon on the bottom of one of the bagel’s bottom halves. Add the cheese egg on top. Top with the other fried egg. Add hot sauce if desired. Add the bagel top, repeat with the remaining ingredients, and serve immediately.
DO I HAVE TO USE EVERYTHING BAGELS?
Not at all. They are just my go-to bagel and a flavor we always have on hand.
Everything bagels add a huge explosion of flavor even when just served plain, making an excellent bagel for a sandwich.
But, you can use other flavors, I suggest:
- Plain
- Asiago
- Poppy seed
- Multigrain
- Sesame Seed
WHAT OTHER INGREDIENTS CAN I USE?
So many options! Let’s break it down by ingredient. We already talked about bagels above, let’s move on to the filling.
In place of American cheese use:
- Sharp cheddar
- Provolone
- Swiss
- Gruyere
- Smoked Gouda
- Whipped Cream Cheese (flavors work too!)
- Boursin cheese spread
In place of bacon use:
- Canadian Bacon
- Turkey Bacon
- Sausage patty
- Country Ham
- Fried Spam
- Sweet Ham
Instead of fried eggs, use scrambled. With or without more cheese, yum!
CAN BREAKFAST SANDWICHES BE FROZEN?
Yes! Very easily, actually. You just need to follow these steps:
- Assemble the sandwich fully, then allow it to cool completely.
- Wrap with plastic wrap and then foil.
- Place in a freezer-safe airtight container or plastic bag.
- Place it in the freezer, where it will keep for up to 3 months.
- When ready to eat, place the sandwich in the fridge overnight to thaw. Reheat wrapped in just foil in a hot oven until warmed through.
Take note that freezing and reheating will produce a fully cooked egg.
HOW TO STORE:
Store leftovers in an airtight container in the fridge for up to 3 days.
To reheat, wrap in foil and place in a hot oven until warm. Just keep in mind that the egg will become fully cooked.
To freeze, wrap with plastic wrap and then foil—place in an airtight freezer-safe container for up to 3 months.
To thaw, place the sandwich in the fridge overnight, then heat and enjoy.
