Artichoke Ravioli with Mushrooms & Spinach is what’s for dinner. A bag of frozen pasta from the freezer and a quick peek in the vegetable bin and in 30 minutes dinner is served.
I’m guessing that a lot of you Silly Girl readers have found yourself asking the same questions after a busy day at work or home. Sometimes what’s for dinner is something you’re thinking about at dinner time.
 Artichoke Ravioli with Mushrooms and Spinach, an easy delicious weeknight meal ready in 30 minutes!
I always keep a bag of ravioli or tortellini in the freezer and I always have plenty of pasta in the pantry. When time is short it’s just a matter of grabbing your pasta of choice tossing in some fresh vegetables and mixing with the pesto or Alfredo sauce. Easy!

Artichoke Ravioli with Mushrooms and Spinach {contributor Alison}

Ingredients
  • 1 (12 ounce) bag Artichoke Ravioli
  • 4 ounces sliced mushrooms
  • 2 cups fresh baby spinach
  • ½ teaspoon minced garlic
  • 2 tablespoons butter
  • 1 cup chicken, grilled and chopped
  • ½ cup Parmesan cheese
  • ¼ cup milk
  • ¼ cup heavy cream
  • Salt and pepper
Instructions
  1. Melt the butter in a large skillet pan. Add the mushrooms and sauté until caramelized, about four minutes. Add the spinach and garlic and stir until the spinach has wilted. Stir in the chicken.
  2. Meanwhile cook the ravioli according to the package instructions. In a small saucepan, stir the milk, cream and Parmesan cheese until slightly thickened. Add salt and fresh ground pepper to taste.
  3. Then add the ravioli and the cream sauce to the mushrooms and spinach mixture and stir to coat all ingredients.
