One of the hardest things for me while eating healthier is lunches. I really don’t want to spend the time to make myself a whole meal. Which is why in the past I used to go straight to leftovers.
Well, first of all, I used to make HUGE portions for dinner. Sometimes, enough for me to have at least one, to two lunches of leftovers. Huge problem.
Not only were they huge, they were just loaded with calories. SO, I was having large, high calorie dinners and then the same thing again for lunch the next day. Not a good combination.
I’ve been huge on portion control now and I might have some grilled chicken left over from the night before but that is a perfect addition to veggie lettuce wraps or a salad. But, those can get boring fast.
